THE RESTAURANT
Florian Maison is a charming restaurant with a hotel, part of the Châteaux et Hôtels Collection, an organization founded by Alain Ducasse. It is nestled in the greenery of a breathtaking valley in San Paolo D’Argon, just outside Bergamo. This is the realm of Chef Umberto De Martino and his partner Monia Remotti, the maître d’.
De Martino’s cuisine pays homage to tradition, showcasing technique, skill, and passion. It is a beautiful example of Mediterranean cuisine served in a bright dining room with classic decor, featuring shades from white to ivory. During the warm season, guests can dine outdoors, enjoying views of the surrounding woods and meadows.
THE CHEF
Chef Umberto De Martino chose to cook from an early age because, as a stutterer, he longed to communicate but struggled to do so. He found in cooking a means of communication that did not require words. For him, cooking is an art, and art can express feelings without the need for language.
Umberto is a young chef of Sorrento origins who came to the Bergamo valleys a few years ago for love. The son of a strong and authoritarian cook, he learned the art of cooking as a self-taught chef. His passion, pursued with perseverance and dedication, led him to earn the prestigious Michelin star.
