The Chef
Ramon Perniceni
Ramon Perniceni was born in Locatello in Valle Imagna, but his experience quickly took him around the world.
After attending culinary school in San Pellegrino, at the age of 15, he began working in various kitchens, from Michelin-starred restaurants to luxury hotels, moving from Italy—with its islands and mountains—to Europe and beyond, even reaching another continent, specifically Australia.
Now, he is the chef at Daste Bistrò, where he leads the kitchen following a ‘zero waste’ philosophy. Here, he offers carefully crafted dishes that appeal to all tastes. Simple dishes are enhanced with just a few ingredients, elevating them to a high level.
