The cured meats and fresh meats of Prosciuttificio “Cà del Botto” are produced by devoting great attention to the research of raw material and to slaughtering, which is carried out in the factory owned by the company so as to ensure that the production has a continuous supply of freshly slaughtered pigs, without trauma or spasms, so as to obtain soft anatomical parts, without any rupture of blood vessels. The pigs here adhere to a certain quality, of the same selected breed, of uniform weight, and are raised under the strictest criteria of hygiene and naturalness. In addition, the presence of the slaughterhouse on the farm allows processing while the meat is still warm as farmers and breeders in the area once did.
