The Monaci farm is located in the Upper Brembana Valley, in Branzi: an area among the most pristine and best preserved in all of Bergamo. Here the herd spends the winter under shelter, in the historic free-stall barn; in spring and summer, however, it is transferred by transhumance to the “Mersa – Costa Sasso” pasture, located in the territory of the municipality of Carona (near the Calvi refuge), where the pastures are rich in herbs. Milk is the real protagonist and the secret ingredient of this dairy’s production: in fact, superior organoleptic characteristics are found, as well as unmistakable aromas, which make the cheeses high quality products.
The milk produced in the mountain pasture is still processed traditionally: heated with wood fire.
The company specializes in the artisanal production of typical Bergamasque cheeses, among which “Formai de Mut dell’Alta Valle Brembana DOP” certainly stands out, which most of all represents the company, in its two variants: summer mountain pasture production and winter valley production.
