The Cascina Moroni farm, with its land, is historically divided between Stezzano, where the countryside is cultivated with cereals with annual crop rotation, and Bergamo – Censuario di Castagneta in Via Valmarina. In the latter location, the countryside is partly forest and pasture and partly vineyard, an ancient site-as reported by the cabrei-that was provided with replanting in 2009, following modern cultivation techniques and making mechanized the various stages of processing. Here, where the vineyards develop amphitheatrically around the ancient monastery creating an unmissable setting, the “spurred cordon” technique is used on the reds and “guyot” on the whites. Vinification takes place at a friendly winery with tanks owned and stored at the winery.
