The farm is dedicated to raising Alpine chamois goats for the production and processing of their milk. Nicolo is in charge of the daily management by taking care of their milking, feeding and meadow management. The goats, milked twice a day, follow a seasonal diet and necessarily linked to the biological needs of the animal according to the production and reproductive cycle. The milk produced is processed directly in the farm dairy by Lorenzo following the HACCP self-control criteria, keeping the milk raw, without any heat treatment in order to keep the typical aromas unaltered and enhance the organoleptic characteristics. The local health company carries out periodic checks: monthly milk analysis, semi-annually dairy product analysis and, annually, water quality is checked, as per state-region regulations.
