In a spectacular landscape at 1800 meters above sea level, Alfio’s herd, nearly 100 head of which 60 are lactating, spends the entire summer: from the beginning of June until the end of September. This pristine territory allows the animals to feed on the best fresh grass and produce quality milk, which is turned into delicious cheeses. Even in the winter months, when they return to the valley, the cows are fed only fodder from these lands, without resorting to industrial feed.
The flagship of Alfio’s production is Formai de Mut DOP, cheese from the mountain: once these wheels were used to pay the pasture rents. In summer Formai de Mut Blu d’alpeggio is produced, and in autumn and winter Formai de Mut Rosso di Valle is produced. The cows are milked twice a day and, the cheese, made immediately after milking from the freshest milk. The full range, which can be purchased at the commissary in Branzi, run with great professionalism by his wife Simona, also includes Branzi, blue-veined tomini, formaggelle, stracchino, a wide selection of goat’s cheese, butter and yogurt. Only milk produced by Alfio’s herd is used for all production.
