THE RESTAURANT
Passion and love for the territory and the raw materials it offers are the two cornerstones of the long culinary tradition of Ristorante della Torre, led by Chef Diego Pavesi.
This family-run establishment has been in operation since 1898, as evidenced by the earliest documented management by the Pavesi/Rudelli family. It is located within the same hotel, nestled at the foot of the 13th-century tower.
The Sala del Pozzo, skillfully renovated (with a summer veranda), offers a creative cuisine with deep traditional roots, focused on high-quality raw materials, the creativity, and the skill of Chef and Patron Diego Pavesi.
The Sala Rosa provides a more classic setting, offering traditional dishes of Lombard and Italian cuisine, using exclusively selected raw materials, preferably locally sourced (km 0) or at least national products.
Another highlight is the wine cellar, one of the best-stocked in the Bergamo area, offering a wide selection of national and international wines preserved in a charming environment.
Currently, a generational transition is being organized, allowing the fifth generation to continue and modernize the entire structure.
THE CHEF
Diego Pavesi
In the kitchen, Diego presents gastronomic specialties that draw inspiration from both the traditional culinary culture of Bergamo and international influences, combining typical Lombard dishes with innovative creations.
The chef draws from inspirations and experiences gained in Michelin-starred restaurants in Italy and France, including the Antica Osteria del Ponte in Cassinetta di Lugagnano with Executive Chef & Patron Ezio Santin, and the Louis XV in Monte Carlo with Executive Chef Alain Ducasse.
During his career, Diego has received important awards and recognitions, including:
The Sole di Veronelli, Gold Medal Award from the Italian Chefs Federation and ASS Provincial Chefs of Como in 2003.
The Gold Medal Award for Career Achievement in 2011, for enhancing the category with skill and prestige, always honoring the tradition of culinary art, presented by the Association of Chefs of Como and the Italian Chefs Federation.
3rd place in the “International Attitude” category at the InAlto by Bormioli Rocco Competition in 2016.
